The diagnosis changed her relationship with food — but it did not change her love for it. Rather than accept a life of bland, joyless eating, she turned to the ingredients she had grown up with in Venezuela: cassava, plantain, corn masa, almond flour. Foods that are naturally gluten-free, deeply nutritious, and the foundation of one of the world’s most vibrant culinary traditions.
